Stuffed Pizza Peppers

Starting a new way of eating is always nice — it makes me feel healthy, creative, and in control. It’s nicer still when the husband says he’s on board and that he’d like to eat the same way. So, to celebrate our decision to go low carb together, we harked back to our early dating days when he broke my Atkins diet with a slice of pizza. This time, though, we’re taking all the pizza goodness off the crust and putting it into a capsicum.

What you’ll need:

  • Capsicums (in different colors to make it fun)
  • Olive oil
  • Salt and pepper
  • Mozzarella
  • Your favorite pizza toppings (for the picture above, I only had enough energy for onions, tomatoes, and bacon)

Sorry for the lack of measurements. Sometimes, home cooking means just working with what you have on hand and making it work.

Preheat oven to 350 degrees F.

Grate the mozzarella and slice your chosen pizza toppings to little bits and mix together.

Slice the capsicum in halves or quarters (your choice) and remove the seeds. Stuff each section with the mozzarella mixture and season on top with salt and pepper. Arrange on a baking sheet and drizzle with olive oil. Pop in the oven for 20 minutes or until the cheese is melted.

Enjoy with Tabasco.

And a Diet Coke.

While accepting the husband’s promise to never break your low carb diet again.

    1. I know what you mean. Just before deciding to give up pie crusts this time around, I was making puff pastry! lol!
